Taco Pasta Bake


Ooooh....what a fantastic dish this was! Mexican-check! Pasta-check! Cheese-check! What more could you ask for really?! I found this on a blog, but I can't remember whose blog it was, so if it's yours please let me know and I will gladly give you credit.
Taco Pasta Bake
Ingredients:
1 lb. Ground Turkey
1/2 Onion, diced
1 Packet Taco Seasoning
1 Can (15 oz) Tomato Sauce
1 Box Pasta (I used bowties because they are cute)
1 pkg (8 oz) Cream Cheese, softened
1 C Sour Cream
1 Pkg (8 oz) Shredded Cheddar Cheese
Directions:
Cook pasta according to directions. Meanwhile, brown ground turkey with onions. Add taco seasoning and tomato sauce and simmer for 5-10 minutes. Mix softened cream cheese & sour cream in separate bowl. Spray bottom of 9x13 pan. Place pasta in the pan. Spread cream cheese mixture over pasta. Spoon ground turkey mixture over pasta. Sprinkle cheese over top. Bake at 350 degrees for 20-30 minutes. Let cool 15 minutes before serving.

Mexican Pie


I found this recipe on a blog. I usually write down the source but for some reason didn't on this one, so if it's yours let me know so I can give you credit.

I just bought a springform pan and figured this would be a great way to try it out-and I was right! This was so good! I'll definitely make it again.

Mexican Pie

Ingredients:

1 lb. Ground Turkey

Flour Tortillas (the ones I had were smaller than my pan, so I used 3 for each layer)

1 Packet Taco Seasoning

1 Can Black Beans, drained & rinsed

1 Onion, chopped

1 C Frozen Corn

1 Poblano Chile, chopped

2 C Shredded Cheddar Cheese

Directions:

Preheat oven to 400 degrees. Add some olive oil to a large saute pan and add ground turkey, onion, and chile-cook until done. Add taco seasoning, black beans, corn, and 2/3 cup water and simmer 4-5 minutes or until most of liquid is gone. Spray the bottom of the springform pan with cooking spray. Place tortillas on bottom (trim if necessary). Add half of the turkey mixture to the tortilla and press down. Add half of cheddar cheese. Place another layer of tortillas, then the remainder of the turkey mixture, then the remainder of the cheddar cheese. Place tortillas on top to cover. Bake for 20 minutes. Be sure to place a baking sheet underneath to catch any drippings. Remove from oven and let sit for 5 minutes prior to cutting. Garnish with sour cream & cilantro.

Mexican Redneck Casserole-how can you not love it?!


Ok, so at work yesterday everyone was raving about this recipe-love the name. Debbie found it on sparkpeople.com and made it over the weekend. Well, after smelling it in the microwave I just had to try it! It reminded me of Hamburger Helper-homemade version. Yum-O! I made a couple of modifications and it was FABULOUS! I'll be waiting for the next one, Debbie!

Mexican Redneck Casserole

Ingredients:
1/2 Box Macaroni, cooked
1 lb. Ground Turkey
1 pkg. Taco Seasoning
2/3 C Water
1 Onion, diced
1 Green Pepper, diced
3 Cloves Garlic, minced
1 C Frozen Corn
1 C Sour Cream
1 Pkg. Dry Onion Soup Mix
1 Can Cream of Celery Soup
1 Can Cheddar Soup
8 oz. Mild Cheddar Cheese, shredded

Directions:
Brown Turkey with onions, garlic, corn and green pepper. Once browned, add taco seasoning, water, and simmer for 5 minutes. Mix sour cream, onion soup mix, cheddar cheese soup, Cream of Celery soup, and cheddar cheese and add to the ground turkey mixture. Place mixture in a 9x13 baking dish. Bake at 350 degrees for 35 minutes.

Invite all of your redneck buddies over to enjoy!

Big Ass Veggie Burrito


This recipe is from "Skinny Bitch in the Kitch". It is absolutely delicious! I will definitely be making this one again!



Big-Ass Veggie Burrito
(from Skinny Bitch in the Kitch)
Ingredients:
1 C Brown Rice
2 C Water
1/2 tsp. plus a pinch of fine sea salt (I used Kosher)
1 (15 oz) Can Black Beans
1 T refined coconut oil (I used Safflower)
1 Yellow Squash, cut into 1/2 inch cubes
1 Green Bell Pepper, cut into 1/2 inch dice
1 Mild Green Chile, cut into 1/2 inch dice
1/2 Red Onion, cut into 1/2 inch dice
1 Zucchini, quartered lengthwise and cut into 1/2 inch slices
4 Cloves Garlic, minced
1 tsp. Chili Powder
1 tsp. Ground Coriander
1 tsp. Ground Cumin
2 Tomatoes, cut into 1/2 inch cubes (I used Tomatillos)
2 T Lime Juice
4 (12-14 inch) Whole Wheat Tortillas, heated (I used Ezekiel from the health food store)
1 lb. Vegan Cheddar (I used about a cup of regular cheddar), shredded
1/2 C Coarsely Chopped Fresh Cilantro
2 Scallions, thinly sliced
Directions:
In a 1 to 2 quart saucepan over high heat, combine the rice, water and a pinch of salt. Bring to a boil, reduce the heat to a simmer, cover, and cook until the water is absorbed and the rice is tender, about 45 minutes. Remove from the heat and let the rice stand, covered at least 10 minutes. (I used my rice cooker)
Meanwhile, place the beans and their liquid in a 1 quart saucepan over medium heat. Bring to a simmer, reduce the heat to low, and cook until the beans are heated through, about 3 minutes. Cover and set aside. (I skipped this process and simply drained & rinsed the black beans. Canned beans tend to have a lot of sodium, so by rinsing you can get rid of a lot of it).
Heat the oil in a 10-12 inch skillet over medium high. Add the squash and cook, stirring occasionally for 1 minute. Add the bell pepper and chile and cook, stirring occasionally for 1 minute. Add the onion and cook, stirring occasionally, for 2 minutes. Add the zucchini , garlic, chili powder, coriander, cumin, and the remaining salt and cook, stirring occasionally, for 4 minutes, or until all the vegetables are crisp tender. Stir in the tomatoes. Reduce the heat to low, cover, and cook for 4 minutes, until the vegetables are very soft. Stir in the lime juice.
To serve, lay a tortilla on a work surface and top with 1/4 of the rice, arranging it in a column down the middle of the tortilla, 2 inches from either edge. Top with 1/4 of the beans, 1/4 of the veggies, 1/4 of the cheese, 1/4 of the cilantro, and 1/4 of the scallions. Fold one side of the tortilla up and over the fillings, fold in the edges, and continue rolling the tortilla to the other side, making a tight bundle. Transfer the burrito to a plate, seam down. Repeat with remaining tortillas-makes 4.

Camping Fun!


We went camping at Happy Horseshoe Campground in North New Portland, Maine for the weekend with my parents. I made Chicken Enchiladas at home and heated them through for lunch Saturday which worked out well. My father especially likes my enchiladas-This one's for you, Dad!


Chicken & Black Bean Enchiladas

1 Rotisserie Chicken
1 Can Black Beans, drained & rinsed
1 Onion, diced
2 Cups Frozen Corn
Olive Oil
Salt
Pepper
8 Whole Wheat Tortillas
1 Large Can Green Chile Enchilada Sauce
2 Cups Shredded Cheddar Cheese




Pull chicken off the bones and shred. Heat a large saute pan and add a couple rounds of olive oil. Add onion and cook until soft. Add black beans, corn, salt, pepper. Once warmed, add chicken. In a 9x13 baking dish, add about 1/4 of the enchilada sauce on the bottom. Lay out a tortilla, add about 1/2 cup filling and a sprinkling of cheddar cheese and roll. Place seam side down in the baking dish. Repeat until filling is gone. When pan is full, pour the remainder of the sauce over the enchiladas and sprinkle with the cheddar cheeese.

Bake at 350 for approximately 20-30 minutes until heated through. Serve with sour cream, cheddar cheese, black olives. Enjoy!
