I decided to make Baked Beans in the crockpot and bringing them camping with us. That way, we could just grill some ribs and dinner would be ready! I started the beans and realized I was out of molasses. So, I figured I could use BBQ sauce instead (hey: I'd heard of bbq beans before!). They turned out really good! My husband kept adding bbq sauce, so I'm not sure how much in total we ended up using. Thanks Honey-they turned out great! In fact, I don't think we'll ever use molasses in baked beans again! And thanks Mom for satisfying my last minute craving for pasta salad!
BBQ Baked Beans
In a crockpot, add a pound of dried beans (I used Great Northern) and 5 cups of water. Place on high for 2 hours and then turn crockpot off. Let set for 4 hours. In the meantime, cook 6 strips of bacon and crumble when cool. Once the beans have soaked, add the following: crumbled bacon, 1 diced onion, salt, pepper, 3/4 Cup BBQ Sauce (I used KC Masterpiece & Sweet Baby Ray's). Cook on high for 4 hours. Check periodically and add more BBQ Sauce according to taste. Enjoy!
