Healthy (but Yucky) Muffins!


So, I had printed this recipe quite a while back, but once again I don't remember where I got it though. I had some cranberries and a couple of apples that I needed to use so I thought this would be the perfect recipe. Plus, I have had this outrageous sweet tooth lately and thought this would be a great healthy alternative. Boy, was I ever wrong. These muffins were horrible. Anand said he thought, overall, the muffins were good, but the cranberries were too bitter. Even our daughters spit them out! I was going to send some home with Mom & Dad but forgot (believe me, you'll thank me later!) so there will be 10 "Healthy Muffins" in our trash can tonight-unless I decide to bring them to work for more opinions! I'll take corn muffins (or chocolate chip) any day, thank you!

Healthy Muffins

Ingredients:

1 Egg

3/4 C Milk

3 T Oil

1/2 C Sugar

1 Medium Apple, peeled & chopped

1 C Cranberries

1 C Oats

1 C Whole Wheat Flour

1/4 tsp. Salt

1 T Baking Powder

1/2 tsp. Nutmeg

2 tsp. Cinnamon

Directions:

Preheat oven to 450 degrees. Beat egg, milk, oil and sugar. Stir in apples & cranberries. Combine dry ingredients and stir in with the wet mixture. Bake for 15-20 minutes.

Cheesy Hashbrown Casserole


We felt like a hearty, yummy, cheesy dish for breakfast today so I whipped up this casserole. I originally found this a while back and made it for Christmas Eve breakfast. I don't remember where I found it-someplace online. This casserole is delicious-not healthy at all-but good! You could use fat free sour cream, reduced fat cheese, soup and add veggies and omit the bacon for a healthier version, though.
Ingredients:
1 (32 oz) Package Frozen Hashbrowns-thawed
1 Cup Sour Cream
3 Cups Shredded Cheddar Cheese
4 T Butter
1 Can Cream of Mushroom Soup
1 Small Onion, Chopped
10 Strips Bacon, Chopped & Cooked
4 T Bread Crumbs
Directions:
Spread the hashbrowns out in a 9x13 baking dish. Cover with 2 T melted butter and toss to coat. In a large bowl, combine sour cream, 2 1/2 cups cheese, soup, bacon, and onion. Mix well. Pour the hashbrowns into the bowl and mix with the sour cream mixture. Pour everything from the bowl into the baking dish. Cover with leftover 1/2 C cheese, breadcrumbs and leftover melted butter. Bake for 50 minutes at 350 degrees (broil for the last 5 minutes for a crispy top).

My Darling Husband's Potato Pancakes!


We ended our fun camping trip with my husband's delicious potato pancakes! We had leftover homefries from Saturday's breakfast, so he decided to whip up some pancakes. The thing about my husband is that he makes his own recipes in his head. Well, I am a "recipe girl" and need everything written out for me. I'll try my best to remember the ingredients!


Leftover seasoned Homefries (we had approx. 3 Cups)
3-4 eggs
Milk
Salt

Pepper
Parsley
Olive Oil


Heat saute pan and add a couple rounds of olive oil. Mash the homefries and add the rest of the ingredients. Mix well and drop onto pan. Flip when the first side is browned. Remove once both sides are browned. Honey: Did I forget anything :)
